Why Temperature Matters
Too warm, and alcohol dominates while the wine tastes flat. Too cold, and aromas and flavors shut down. Most people serve reds too warm and whites too cold. A quick rule: put reds in the fridge for 15-20 minutes before serving, and take whites out 15-20 minutes before pouring.
Need gear? A wine cooler keeps bottles at the right temperature year-round.
