It's all about the skins

Red wine ferments with grape skins, which add color, tannin and many of its flavors. White wine is pressed off the skins first.

Taste and food

Reds tend to be fuller with tannin; whites are usually lighter with more acidity. Match the weight of the wine to the weight of the food.

Serving temperature

Reds: 60-65°F. Whites: 45-50°F.
